SPEARMINT
Menta rotundifolia

Origin:  Europe              Spearmint

Plant description and cultivation:

Mints are hardy perennials that prefer sun or part shade with moist soil.  They spread rapidly so it’s best to plant them in containers to curb their wanderings.  There are many varieties, but this is the traditional spearmint with a strong mint flavor.  Other varieties are pineapple, apple, orange, chocolate, peppermint, and even grapefruit.

Uses:

Mint has many culinary uses….add to peas, carrots, fruits, tabouleh, lamb, desserts, jellies, and anything chocolate.  Add to iced tea as flavoring or garnish.  Mint branches are attractive (and aromatic) in floral arrangements, but don’t be surprised if they take root!  Add to potpourris and home-made soap.  Mint leaves dry well.


TARRAGON
Artemisia dracunculus

Origin:  Southern Europe, Asia, western United StatesTarragon

Plant description and cultivation:

French tarragon (not Russian) is the preferred variety for culinary purposes.  A bushy perennial, it has slender, bright green leaves with a peppery, anise-like flavor.  Grow in full sun and moist soil.  Replace every four years.

Uses:

Popular in French cooking, it is the primary flavoring in Bernaise and remoulade sauces.  It can also be added to eggs, chicken, fish, salad dressings, green beans, carrots, parsnips and aromatic vinegars and oils.  Use sparingly, and add only at the end of cooking times (to avoid bitterness).  Leaves can be dried successfully.

   
 

THYME, COMMON
Thymus vulgaris

Origin:  Mediterranean Common Thyme

Plant description and cultivation:

There are hundreds of species in the Thymus genus.  This variety, a low-growing matte-like evergreen perennial herb with tiny aromatic leaves and white flowers, is very popular in gardens.  It needs full sun and responds well to pruning.  If it becomes too woody, replace with a new plant.

Uses:

Another of the fines herbes of French cuisine, use this in fish dishes, soups (especially clam chowder), lamb, pork and herbal vinegars.  Flowering sprigs can be used as garnishes and in bouquet garni.  Leaves can be dried successfully.

   
 

THYME, CREEPING
Thymus serphyllum

Origin:  Mediterranean Creeping Thyme

Plant description and cultivation:

This variety of thyme has slender, creeping stems and round leaves with lavender blooms.  It can withstand light foot traffic and is drought tolerant once established.  This perennial is hardy in zones 5-8.

Uses:

Primarily used as an ornamental ground cover, this thyme can be used in the same dishes as common thyme but is not as flavorful.
